Gringos Tacos Denver was founded during the pandemic of 2020, by Travis Nicoletti and Chris Carey. In August of 2020, with the blessing of Jim Pittenger, they started hosting Taco Tuesday pop ups at the famous Biker Jims. After the first Tuesday they knew they had to start their own Taco Concept. With all of the money they made in a few Tuesdays they were able to secure a food trailer and Gringos Tacos Denver was born.
Travis Nicoletti has a strong background in concessions, he managed Biker Jims outside locations as well at Coors Field, Red Rocks, And Mile High. He brings with him a strong understanding of how to make good food really fast.
Our mission at Gringos Tacos is simple, make good food for good people. You wont find your traditional taco here, but we promise you will never be disappointed.

The Cowboy: Braised BBQ Rib Meat with Pickled Jalapeños, Fried Onions and Topped with a Spicy Jack Daniel’s House BBQ Sauce & Oaxaca Cheese
Elotes: Sweet corn, Topped with Spicy Mayo, Chorizo Crumbles, Cotija Cheese and Paprika
Borracho Beans: Simmered Beans with Bacon and Onion, Tomatoes cooked in Mexican Cerveza
